Few items will conjure such a wide array of memories and images as the basic, perennial favorite ‘French Fry.’   From childhood memories of fast food served in paper pouches, to deliciously greasy diner slices, French Fries are as diverse an offering as the venues in which they are found.  With no clear or correct way to serve the item, ‘Fry’ is more of an umbrella term than an actual dish or recipe.

While I am certainly no stranger to any of the aforementioned varieties, there are no doubt times when diner-style fries simply will not cut it. Instead, a fry that will fit seamlessly into a casual dinner party or formal luncheon is in order, an item that compliments rather than overpowers the main course, while still adding its own dash of ‘elegant fun.’  That fine middle ground is precisely the role filled by these parmesan-crusted steak-fries.

Baked Parmesan French Fries

Baked Parmesan French Fries Recipe

Combining the hardiness of a solid steak fry, skin intact, garlic parmesan crusting, these fries are absolutely delicious!

Ingredients

  • 6 – 7 Russet potatoes – sliced into wedges with skin
  • 2 tsp. lemon juice
  • 2 tsp. apple cider vinegar
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. paprika
  • ½ tsp. sugar
  • 2 cloves garlic – crushed and chopped
  • ¼ cup of Italian parsley - chopped
  • ½ cup Parmesan cheese - shredded
  • 2 tbs. Canola
  • 2 tbs. Olive oil

Instructions 

Preheat Oven 350 degrees:

  • Leaving the potatoes whole; wash and dry them.
  • Leaving the skin on the potatoes; cut the potatoes into wedges.
  • Place the wedges into a large bowl; add the Canola oil, olive oil, lemon juice, vinegar and the seasonings and toss to evenly coat each potato.
  • Place the potatoes on a baking sheet in a single layer. Do not overlap the fries.
  • Bake for 15 – 20 minutes then carefully turn the potatoes over to get a nice golden color on the other side. Bake for another 15 – 20 minutes or until a beautiful golden color is achieved on both sides.
  • Take the potatoes out of the oven and place on an oven-proof serving platter; sprinkle fries with the grated Parmesan cheese and fresh parsley. Place back in the oven for 2 – 3 minutes; just enough time to gently melt the cheese.
