Egg, Avocado, & Tomato Toast Recipe

With the school year coming to a close getting the boys up and out for school in the morning is becoming a little more of a chore. One thing I’ve been doing is playing around a little with weekday breakfast, making it a little more special than just the normal cereal. I’m hoping that will encourage a little more joy in the morning.

Still though, I don’t have a ton of time and I need to feed the guys something that hits all the food groups, so I’ve been trying to find quick recipes that work for the boys, my husband and me.

This recipe is one that I’m loving.

Egg, Avocado, & Tomato Toast Recipe

Ingredients:

  • 1/2 of an avocado, smashed
  • 1 slice tomato, one slice
  • egg, fried or sunny-side up
  • 1 slice of Pepperidge Farm® Harvest Blends Seeded Bread

Directions:

  1. Toast Pepperidge Farm® Harvest Blends Seeded Bread slice, then top with smashed avocado, tomato slice, and egg (fried or sunny-side up).

I really like Pepperidge Farm® Harvest Blends bread because it’s healthy and of course delicious.

I really like the Harvest Blends Seeded variety for this recipe because the seeds give a little extra crunch and work with the avocado to make you feel like you’re starting your day off extra healthy, but you can easily substitute the Sprouted or Ancient Grains variety for the same effect.
