Frito Salad:

Ingredients
3 to 4 green peppers, diced
4 stalks, celery, diced
2 cups grated cheddar cheese
1 large bottle (16 fl. oz) Catalina Free dressing
1 can sliced olives
4 green onions, diced (tops and most of bottom)
3 to 4 tomatoes, diced (I remove most of seeds)
2 cans kidney beans, drained
1 large (15 oz.) package of Fritos

Directions
Combine all ingredients except Fritos. Chill. Prior to serving, add corn chips, or get Big Scoop Fritos and use salad as a dip.

I like to use less dressing than the recipe calls for–I just eyeball it until salad is coated.

    FRITO PIE RECIPE

    Ingredients

    * 2 LBS ground beef
    * Chili Powder (to taste I assume, none is written)
    * Colby cheese
    * Bush’s Chili Beans, Hot (I like it mild hee hee)
    * Fritos

    Directions

    1. Brown meat
    2. add beans and chili powder
    3. Layer fritos, meat mixture, Colby cheese, another meat and then cheese layer then fritos again in baking dish.
    4. Bake to melt cheese.
    5. 350

    I used reduced fat products in this recipe and it’s really yummy:

    Mix a packet of taco seasoning with a can of refried beans and spread in a pie plate. Spread one cup of salsa over the beans and then cover with a small container of sour cream followed by an 8 oz package of shredded cheese. Sprinkle top with chopped tomatoes and green onions. Use Fritos Scopps to scoop up and enjoy the dip!

    I like deviled eggs for any event. My husband also makes a great dip involving canned chili, Velveeta Cheese and smoked sausage. We eat it with Tostitos chips.

    My favorite tailgating recipe is as follows for a yummy black bean dip

    3/4cup uncooked black beans, rinsed and sorted
    1tablespoon vegetable oil
    1large onion, chopped
    3cloves garlic, minced
    1/2cup thick and chunky salsa (medium or hot)
    1can (4 ounces) chopped mild or hot chili peppers, well drained
    1tablespoon lime juice
    1/4teaspoon salt
    1/4teaspoon black pepper
    1/8teaspoon hot pepper sauce
    Sour cream
    Tortilla chips

    To quick soak beans, place beans in large saucepan; cover with 4 inches water. Bring to a boil over high heat. Boil 2 minutes. Remove from heat; cover. Let stand 1 hour; rinse and drain.
    2.Add 2 cups fresh cold water. Bring to a boil; reduce heat. Cover and simmer 1-1/2 hours or until beans are tender.
    3.Heat oil in medium skillet over medium-high heat. Add onion and garlic. Cook and stir 3 minutes or until onion is tender.
    4.Transfer onion and garlic to food processor. Add beans, salsa, chilies, lime juice, salt, black pepper and hot pepper sauce; process until almost smooth, scraping side of bowl occasionally.
    5.Cover; refrigerate 2 hours to allow flavors to blend. Top with sour cream and serve with tortilla chips. Garnish, if desired.

    Classic Pico de Gallo is always good.

    Chop up 1 small onion, 2 small tomatoes, 1 small jalapeno. Add some cilantro, lime, salt and pepper to taste. Serve with Frito scoops.

    Here’s a dip recipe that tastes really good with fritos. It’s a black eyed pea dip recipe

    Cook Time: :30
    Ingredients:

    * 1/2 green bell pepper, finely chopped
    * 2 stalks celery, finely chopped
    * 3 to 4 green onions with tops, chopped
    * Oil
    * 1 teaspoon black pepper
    * 2 teaspoons Tabasco
    * 1/2 cup Ketchup
    * 3 chicken bouillon cubes
    * 1/4 teaspoon cinnamon
    * 2 (15-ounce) cans of black-eyed peas
    * 10 ounce can Rotel tomatoes with green chilies
    * 1 clove garlic, pressed
    * 2 jalapeno peppers finely chopped (fresh, seeded)
    * 1 teaspoon sugar

    Preparation:
    In medium saucepan over medium-high heat, sauté bell peppers, celery and onions in a small amount of oil, until tender. Add black pepper, Tabasco, ketchup, bullion cubes, and cinnamon. Lower heat, add peas, tomatoes, garlic and sugar. Simmer 30 minutes. Serve hot with corn chips for dipping.
    Makes 1 quart of dip.

    Hot Spinach-Artichoke Dip

    1 (10-ounce) package frozen chopped spinach
    2 (13 3/4-ounce) cans artichoke hearts
    1/2 cup mayonnaise
    1/2 cup sour cream
    1 cup freshly grated Parmesan
    1 cup grated pepper jack cheese
    Directions
    Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.

    Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor.

    Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top. Bake for 30 minutes. Transfer to a chafing dish and keep warm over a low flame. Serve with tostidos chips

    I mix together equal parts sour cream and cream cheese in a large casserole dish. Then I layer the following toppings:
    Diced onions, diced melrose peppers, diced tomatoes, monteray jack cheese, cheddar cheese, sliced black olives and diced green onions.
    Serve with Frito Lay Chips for a taste everyone will enjoy :)
