::GIVEAWAY CLOSED::  Congrats to Carol Dziuba (@cdziuba) for this tasty recipe:

Frito Salad:

Ingredients
3 to 4 green peppers, diced
4 stalks, celery, diced
2 cups grated cheddar cheese
1 large bottle (16 fl. oz) Catalina Free dressing
1 can sliced olives
4 green onions, diced (tops and most of bottom)
3 to 4 tomatoes, diced (I remove most of seeds)
2 cans kidney beans, drained
1 large (15 oz.) package of Fritos

Directions
Combine all ingredients except Fritos. Chill. Prior to serving, add corn chips, or get Big Scoop Fritos and use salad as a dip.

I like to use less dressing than the recipe calls for–I just eyeball it until salad is coated.

Number of Servings: 32

Football season is finally here…and everyone knows that game day just isn’t complete without the ultimate tailgating party! Whether it’s with a group of friends huddled outside the stadium or the family gathered around the TV in the den, tasty food and snacks are essential to a “winning” tailgating experience.

Tailgating for most of us conjures images of greasy pizza and saucy wings. With a little vision and planning, you can score big by offering a menu that’s just as delicious but a bit better for you.

Fewer penalties, better tailgating…

We know few people go to tailgate parties for the veggie – it’s definitely a time to indulge and enjoy. But it doesn’t have to be a total eating catastrophe. At Frito-Lay, our portion control sizes make it easy to enjoy all your favorite treats – in moderation. And simple “tricks” like offering dips made with reduced-fat sour cream or that offer positive nutrition like salsa or guacamole, cooking with lean turkey meat and fat-free refried beans can cut hundreds of calories off your meals and still taste great for you and your hungry fans.

I’m going to share my recipe, but since I was a recent winner of a great prize at momspark I will pass on entering this wonderful giveaway.
Taco Salad (Use a big bowl with a lid that stays on well to mix all ingredients in. Take salad utensils to get salad out of bowl. Will need bowls and forks for the individual salad portions to be put into when you reach your destination, or even if you’re at home.)
1 large bag of garden salad mix (the kind that has iceberg lettuce, red cabbage, carrots).
1 to 3 large peeled, seeded and chopped or sliced up cucumbers.
    1 to 3 large tomato’s, I seed mine.
2 to 4 cups of cheddar cheese, we use the low fat variety, sometimes we substitute low fat Mexican Blend cheese.
1 to 2 cans (15oz size) of Red Kidney beans drained.
1 to 2 lb.(s) of lean ground beef, but ground turkey or ground chicken could be substituted, fry well in frying pan and drain. Let cool for a few minutes before adding to other ingredients in bowl.
1 to 2 onion(s) peeled and chopped, I like to use a sweet onion.
1 bag of frito’s corn chips or frito’s chili corn chips.
1 to 2 cups of low fat ranch dressing mixed with about 1 tablespoon of Italian Zesty dressing, low fat kind and not the creamy kind; mix the two dressings together before adding into the bowl. The amount depends on the amount of items you add into your salad.
If you like Zucchini you can add 1 or 2 small ones that you have peeled, seeded and chopped; this is a great way to get zucchini into people who say they hate it. It’s not cooked and so in the salad people just think it’s a type of cucumber.
If you family likes avocado, add in one or two peeled, seeded and chopped into larger bites.
1 can of sliced black olives or whole seeded ones if your family likes them. I personally can’t eat many olives, but my husband likes them alot, therefore I add the whole seeded ones so I can pick them out.
Mix everything together. Put the lid on. Keep chilled in a cooler, or in your refrigerator, depending on your location.
    Leftovers should be refrigerated.
    Good luck to all.
Thanks again to momspark and the wonderful sponsor who recently awarded me a prize, of which is to arrive in a few days. I’m so grateful.

I love to take a block of cream cheese and pour salsa over the top. It is so yummy and of course easy. Then use any frito lay chip you like to dip into this. Also you can use a can of chili and put a good chunk of velveeta cheese into it. Microwave for about 1 to 2 minutes and stir. Chili cheese dip. Also super easy. The second one is really good on fritos
