Grilled Barbecue Chicken Kabobs Recipe

Grilled Barbecue Chicken Kabobs Recipe

Today’s grilled recipe is a delicious barbecue chicken kabob that is perfect for Memorial Day weekend. Enjoy. 🙂

Grilled Barbecue Chicken Kabobs Recipe

Yield: 4 servings

Prep Time: 25 minutes

Total Time: 46 minutes

Ingredients:

  • 8 slice bacon
  • 3 ears shucked yellow or white corn, but into 11/2-inch pieces
  • 11/2 pounds boneless, skinless chicken breasts cut into 2-inch pieces
  • 1 large red bell pepper, seeded and cut into 11/2-inch pieces
  • 1 large green bell pepper, seeded and cut into 11/2-inch pieces
  • 1 medium purple onion, cut into 11/2-inch pieces
  • 11/2 cups barbecue sauce

Directions:

  1. Preheat grill to medium high heat (350F to 400F).
  2. Push 1 skewer through end of 1 bacon piece, then through middle of 1 piece corn weaving bacon through chicken, purple onion, bell peppers and corn. (I used two pieces of bacon per skewer). Repeat with remaining ingredients for remaining 3 skewers. Brush skewers evenly with barbecue sauce.
  3. Grill kabobs, covered with grill lid, basting occasionally with barbecue sauce, 8 minutes per side or until chicken is done and vegetables are tender, turning occasionally. Remove kabobs from grill. Let stand 5 minutes before serving.
