Kate Kilbane’s Irish Soda Bread

Everyone’s Irish on St. Patty’s Day, right?  We wanted to share this fabulous recipe by guest poster, Sue, that you can easily create this St. Patrick’s Day for your family!  Need more St. Patty menu ideas?  Check out Foodily.com and create your very own St. Patrick’s Day menu.

Ingredients:

2 cups flour
4 tsp. baking powder
1/2 tsp. baking soda (make sure it’s a fairly fresh box)
1 cup sugar
1 cup raisins
1/2 cup buttermilk
2 eggs

Directions:

Preheat oven to 350 and spray a 9-inch round cake pan with non-stick spray.

Sift together flour, baking powder and baking soda.

Add sugar, raisins, buttermilk and eggs and mix.

Pour mixture into pan and bake for 40 minutes.


When done, the top should be golden brown and a toothpick should come cleanly out of the center.

While the bread is still warm, melt about 1 Tbsp. of butter and brush on top of the loaf. Sprinkle sugar in the butter.

To eat, slather with butter! It’s really delicious that way! Especially with a hot cup of tea.

    This sounds yummy! I wonder what would happen if I replaced the buttermilk with soy milk…hmmm! My daughter has dairy allergies, but I know she would love this!
