How about mixing it up just a little bit this year and make something totally new, but totally delicious, and the best part? Totally prepared in fifteen minutes or less.

Leftover Turkey Tostadas

Turkey tostadas use all the leftover turkey AND the trimmings!  Gently reheated mashed potatoes and gravy layered with freshly spiced turkey and topped with fresh chives and jalapeño garnish on a corn tostada shell – unexpected and a wonderful way to use everything up without the same old routine.

You can even buy tostada shells pre-cooked so you don’t have to deal with the mess of frying!

All you really need to do is heat the potatoes and gravy, pan fry the turkey in a little olive oil and season generously with salt and smoked paprika, build the tostadas, sit back and enjoy.

Ingredients:

Pre-cooked tostada shells

Leftover turkey pieces, chopped

Olive oil

Sea Salt

Smoked paprika

Mashed potatoes, heated

Gravy, heated

Fresh chives, very thinly chopped

Fresh jalapeños thinly chopped

Directions:

Heat tostada shells in the oven per package directions

In a skillet over medium low heat, cook turkey pieces in olive oil with salt and smoked paprika until heated through

Warm mashed potatoes and gravy.

When everything is ready, take a tostada shell, top with mashed potatoes, gravy, turkey, sprinkle with chopped chives, jalapeño slices [if desired], finish with a little extra sea salt and enjoy.
