Making Week Night Dinners Better with Fire Grilled Chicken

Now that the excitement of the holidays is over, it’s back to thinking about what to serve for dinner each night. I cook so much during the holidays that I have a tendency to let the everyday meals slip by the wayside.
My goals for family dinners are to create something everyone likes, but also to introduce new flavors or ideas to the kids. I like to do so in a way that isn’t too out of their comfort zone because my main goal for family dinner is to create one that we all enjoy.
I want dinnertime to be healthy, especially this time of year when we’ve all over-indulged a bit for the past month or so. Also, like a lot of busy parents, I don’t always have a ton of time to cook. Because of that, I find that chicken is a great solution because it’s healthy, holds flavor, and can be combined with almost any side dish. The chicken is grilled over an open fire to lock in natural juices, so all I have to do is cook up some rice and a vegetable and I’ve got a full, well-balanced, tasty meal. If you’re trying to stay away from starches, you could also heat, and then cool the chicken and add into a salad. For this meal I used the Bourbon BBQ Chicken, I love the way this came out. The flavor is perfect, and the Bourbon BBQ sauce looks so perfect on the plate, when combined with the white of the rice and the green broccoli, but I think it would go well with the Zesty Herbs and Spice variety as well, if you aren’t as much of a dark meat person.
There are other varieties of Cooked Perfect chicken as well, including Lemon Herb Tenders, which seems like a great idea if you’ve got a kid you’re trying to move beyond eating regular chicken tenders.
