Meatless Monday Recipe Idea!

When we think football and tailgating, vegetarian fare might not be the first thing that comes to mind. However, since plant-based diets can be good for people AND better for the planet, why not consider turning Monday Night Football into a #MeatlessMondayNight tradition? 🙂

I’m sure you’ve heard of the Meatless Monday concept by now — essentially it’s about us all doing our part to consume less meat as a whole. Even if you’re not a vegetarian family, we don’t always have to consume meat and in fact, veggie-ful meals can be just as DELICIOUS!

This year, try incorporating one meatless night into your meal planning regime and see just what you can come up with that’ll thrill your family. Even the meatiest of meat-lovers won’t be able to resist the recipe I’m going to share with you today — so don’t be surprised if #MeatlessMondayNight starts to take over other nights of the week as well! Easy Tomato Soup

Yield: 4 servings

Prep Time: 5-10 minutes

Cook Time: 15 minutes

Total Time: 20-25 minutes

Ingredients:

  • 30 oz vegetable broth or stock
  • 28 oz crushed tomatoes
  • cup Silk Soymilk
  • coarse salt and black pepper
  • hot sauce to taste (optional)

Directions:

  1. Combine broth and tomatoes in a large saucepan over medium heat. Once soup starts to bubble, stir in Silk Soymilk and reduce heat to low.
  2. Season with salt and pepper (to taste) and simmer for 15 minutes, stirring occasionally.
  3. Using a hand blender, puree soup, then serve.
  4. Add your favorite toppings and enjoy!
