No-brainer Recipe: Chicken & Broccoli Dinner

001Quick and Easy Recipe’s are my favorite.

My kids eat it, my husband loves it, and I am happy to make it!

My mom calls is Chicken Broccoli casserole, but it needs a better name like

Peppered Chicken Bake….or if you have any name suggestions let me know!

Cut up chicken breast into bite size pieces, cook in skillet with Cheyenne pepper (powder), light or heavy depending on your liking.

Cut up broccoli and steam (those Ziploc steam bags are GREAT!!).

Mix cooked chicken, steamed broccoli, and some cream of chicken soup ( I used the 98% fat free kind). Sprinkle cheese on top and add some croutons to the top (not much, they get a bit soggy, I also add some after cooking to each plate).

**Make this to your liking, heavy on the broccoli, light on the chicken, light on the soup, or heavy on the chicken and soup but light on the broccoli. I usually do 4 chicken breasts, one head of broccoli (the biggest I can find), and 2 cans of soup
