No-Brainer Recipe: Homemade Mac & Cheese

So, that box of bright orange powdered-cheese-type-pasta-stuff works in a pinch…but it kinda freaks me out.


I mean, is anything found in nature that is actually that colour?

Anyway, I came up with a recipe for macaroni and cheese that is just as fast, even more delicious, and (to me) more gratifying.
Quick Homemade Mac & Cheese

makes enough to feed mom and two hungry smallish kiddos. adjust accordingly. :)
  • About a half pound elbow macaroni
  • A pat of butter
  • A couple handfuls of your favourite shredded cheese (i used a four cheese blend of monterey jack, colby, etc.)
  • 1/4 cup milk
  • To taste:
  • Onion powder (a couple dashes)
  • Pinch kosher or sea salt
  • Freshly cracked black pepper
  • Paprika (a couple dashes)
  1. Boil pasta according to package directions. Drain and set aside.
  2. In the same pot, melt butter over medium-high heat.
  3. Add milk, and gradually whisk in cheese until melted. Add spices.

Toss in pasta and serve.

    That sounds way better than the box! I always think that homemade mac-n-cheese is too hard to make, but this isn’t hard at all! I like the idea of putting the spices in it.

    The Petit Appetit Cookbook by Lisa Barnes also has a good recipe for mac and cheese (and you can get a little broccoli in there!) I totally agree about the scary color!

    You’re right! That IS simple! Sounds delish too. Definitely gonna put that on the menu soon. The Hubs loves mac and cheese, but the way we make it is super time-consuming. (Worth it, but not a quick weeknight meal.)
