No Brainer Recipe: Sausage Stew

This one-pot meal is so easy to make. Chop, dump and boil. That’s all there is to this sausage stew. It’s warm and hearty, perfect for those cool fall nights coming up. The beans and potatoes take on the flavors of the sausage and the broth creating a dish that tastes like it simmered on the stove all day. Serve with biscuits on the side to soak up the broth. To make it simple with no mess I use refrigerated biscuit dough.

Ingredients:

1 box chicken broth

1 package Eckrich Smoked Sausage cut into chunks

6 medium potatoes, washed and cut into chunks, skins on

2 cans cut green beans, drained

In a dutch oven or large pot bring chicken broth to boil. Add sausage, potatoes and green beans. Bring back to a boil, then reduce heat, cover and simmer until potatoes are fork tender.
