Gluten Free Chocolate Chip Peanut Butter Cups Recipe
I decided to use the cookie dough two ways. First up? Good old-fashioned chocolate chip cookies. How could I not?
The cookie dough felt just like pre-made dough that I have used in the past and was easy to scoop. (I did let it sit out for a few minutes to soften up a bit) I used a cookie scooper to make even portions, then baked at 350 degrees for 11 minutes.
They came out of the oven looking like – chocolate chip cookies! My little guy was very excited about trying the cookies. Remember, he didn’t know they were gluten free. 😉
He tried one and….. loved it! He went for a second right away. I tried one, too, and it was quite tasty. I did notice a slight difference in taste compared to chocolate chip cookies I’ve had in the past, but it was very, very subtle. The texture was great and felt like a regular cookie.
So, I moved on to making another dessert with the cookie dough – gluten free chocolate chip peanut butter cups!
I have been making all types of peanut butter cups lately, and wanted to see if the chocolate chip cookie dough would work as the cup. I sprayed a mini muffin pan with non-stick spray, then pressed the raw cookie dough into each cup, creating a cup form.
I then baked the cups at 350 degrees for about 5 minutes. When I removed the cups I used the back of a spoon to create a cup form once again. (the dough rises, so you have to press it back down to make the proper shape) Once the cups cooled, I filled with melted gluten free peanut butter chips. You could also use regular gluten free peanut butter as well, either works!
I was quite pleased with the result and they tasted delicious. I love that I now have a yummy dessert to serve to my gluten allergic friends!
