Pressure Cooker Whole Rotisserie Chicken Recipe

If you’ve been a reader here at Mom Spark for awhile, you probably know that our slow cooker whole chicken recipe is one of our most popular.

So, with that delicious chicken in mind, I wanted to test it out in a new way with a pressure cooker. I have been experimenting with the Crock Pot® Express Crock Multi-Cooker as of late, so I decided to give my whole chicken recipe a go.

And it turned out beautiful. I did change it up a bit from my slow cooker version, but it’s not vastly different. Just made a whole lot quicker!

Pressure Cooker Whole Rotisserie Chicken Recipe

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

  • 2-3 lb whole chicken
  • 1/2 medium white or yellow onion, quartered
  • 5 cloves of garlic, peeled
  • 2 tbsp olive oil (divided into 1 tbsp each)
  • 1 cup low-sodium chicken broth or stock
  • 1 1/2 tsp salt (can add more or less per taste)
  • 1 1/2 tsp pepper (can add more or less per taste)
  • 1 tsp chil powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp basil

Directions:

  1. Cover chicken with 1 tbsp of olive oil (I use my hands to make sure it's entirely covered). Sprinkle both sides with salt & pepper.
  2. Stuff chicken with onion and garlic. Set pressure pot to "BROWN/SAUTE" function.
  3. When pot is hot, add remaining olive oil and brown both sides of chicken 4-5 minutes each (be mindful of the onions and garlic inside the chicken or tie up). Remove chicken from pot.
  4. Place trivet into pot (use potholders, as the pot will be really hot). Add chicken stock/broth to pot.
  5. Rub all spices (I mix them all together in both so that they are well combined) over the entire chicken (again, hands are the easiest method). Place chicken on top of the trivet in the pot. Attach and lock lid. Set to "POULTRY" function (25 minutes). note: add more time if the chicken is over 3 lbs.
  6. After cook, use natural release for 15-20 minutes. Let chicken rest 10 minutes before serving.
