A whole chicken covered with olive oil and flavorful spices, stuffed with onion and garlic, then cooked rotisserie-style in an Instant Pot or pressure cooker.
In a small bowl, mix rosemary, thyme, paprika, and lemon pepper in a small bowl. Set aside.
Remove any bags of gizzards, etc. from inside of the chicken. Rub 1 tablespoon of olive oil all over chicken, then sprinkle chicken with salt and pepper on both sides.
Stuff chicken with onions and garlic. Set pressure cooker to “saute” for 30 minutes. When pressure cooker is ready, add remaining olive oil to pot, then place chicken inside uncovered. Flip over after 15 minutes. Remove from pot.
Insert metal trivet into pot, then pour in chicken stock.
In a large bowl, sprinkle spices you set aside on both sides of chicken. Place inside pot on trivet and lock lid on pot. Set pressure cooker on “poultry” for 25 minutes.
