Allergy Friendly Pancakes

When my two year old daughter was 14 months old she was tested for allergies. We discovered that Lani is allergic to eggs, dairy, and beef. Just a few weeks ago she was retested during her one year checkup. We were pleased to find out that her egg allergy is pretty much non existent. The next words out of the allergists mouth were that her beef and dairy allergies had worsened. WHAT?

We now have to be even more careful with Lani’s allergies and diet. She used to be allowed milk baked into foods such as pancakes, waffles, cookies, etc. since her allergy wasn’t too severe at the first appointment. Now she can have NO dairy in her food at all.

With this in mind I went in search of a pancake recipe that was allergen friendly. For each recipe I needed ingredients that I didn’t have in my cupboard or refrigerator. No-brainer Recipe: Chicken Pancakes

Now before you jump to conclusions, I am the first to admit that this might not be as easy as you would expect from a “No-brainer”, but it does have one thing going for it… it is the ultimate comfort food.

Back to school: What’s for breakfast?

Let’s talk about breakfast. Who has time to prepare a wonderful, healthy, amazing breakfast on a school morning?

Ok, maybe Superman’s mom. I am sure she was pretty awesome. But let’s be real here. We mere mortals are lucky to have our teeth brushed and the same two shoes on our feet before we scramble out the door to drop kiddos off to school, right?

My solution? Make it ahead of time. Be prepared.

One of my favourite options for a quick breakfast is homemade banana bread.

I like to make two loaves at a time, wrap one tightly in plastic wrap and freeze it, and keep the other in a resealable plastic bag in the fridge. Every morning, open fridge, take out banana bread, grab some fresh fruit, pour some juice or milk into sippy cups (and sometimes I even do that step the night before!), serve. Go find something other than pajamas to throw on before we run out the door. The end.

This is my Nana’s recipe, originally titled in her commanding, all-caps handwriting “MOM’S BANANA BREAD – THE BEST!” – and it really is the best. Nana didn’t mess around when it came time to bake in her little kitchen. I miss her.

I have contributed some more healthy revisions through the years, and am really pleased with the outcome. My additions of flax meal as a replacement for the eggs originally called for, and even some wheat germ really have not changed the taste at all. Every time I bite into a piece, fond childhood memories flood right back, but my booty thanks me for not overloading on the sugars and fats first thing in the morning.
