No-brainer Recipe: Apricot Coolers with Cherry Ice Cubes

apricot coolers

This little drink is fun, fun, fun! Oh, and extremely delicious to boot. If you have a play date or party coming up, try this recipe. If serving in a large punch bowl, you could make an ice ring with cherries instead. If you aren’t going to use all of it, store the ice cubes in a freezer Ziploc, the apricot nectar and lemonade concentrate can go together into a small pitcher in the fridge, and store the soda chilled in the fridge until ready

No-brainer Recipe: Italian Nachos

italian nacho

A few years ago, pre-kids and when part my income was free to be spent on eating out willy nilly, I often had Italian Nachos at a favorite restaurant. These days I would rather spent the same amount of money on ingredients but be able to make two or three times as much. It is a delicious twist on the same ol’ nachos. If you would like to skip making the chips yourself, try to find a very fresh, thin tortilla chip as a substitute.

No-brainer Recipe: Chicken Pot Pie with Puff Pastry

Chicken Pot Pie

My recipe for Chicken Pot Pie with Puff Pastry is the perfect balance of tastiness and time saving. Utilizing a roaster chicken saves you time without losing any flavor. If you are on a tight budget, you can always cook a whole chicken at home, or even used canned chicken to save a dollar or two. For a delicious twist: add a teaspoon of curry powder. *Note: This recipe makes two pies. This is a  great recipe to serve one pie for dinner and freeze

No-brainer Recipes: Veggie Pizza

This was my favorite food growing up and now it is my sneaky mom way of getting my boys to eat veggies. Every birthday I would request Veggie Pizza to be served as part of my birthday meal. It is fast to make and is great to bring to a bbq or picnic. I hope you and your family enjoy it as much as my family and I do! Ingedients:

Banana Split Brownie Pizza

Looking for a special treat for the kiddos? Look no further than this Banana Split Brownie Pizza. Using your favorite boxed brownie mix as a base and load it up with fruits, nuts, marshmallows and chocolate fudge sauce. As to be expected, this was easy and delicious! I opted to use cool whip instead of cream cheese and sugar, because my husband hates cream cheese. (Sacrilege!)

No-brainer Recipe: Chicken Pancakes

Now before you jump to conclusions, I am the first to admit that this might not be as easy as you would expect from a “No-brainer”, but it does have one thing going for it… it is the ultimate comfort food. Warm and delicious, surprisingly quick to make, and with ingredients you may actually have in the fridge, here is my slightly adapted version of Southern Living’s Chicken-and-Potato Pancakes:

No Brainer Recipe: Tri-Tip Wraps

wraps

I can assure you, I am no cook. I mean, I do know how – like the basics – but I have no ideas and no motivation. Last week at a “mom’s-night-in” wine and dessert party at my friend Cassie’s house, some of the girls were giving me some much needed new (and much improved) ideas for dinner. Here is the most successful of them all: Tri-tip Wraps (yay!) Ingredients~ Tri tip steak (you could use any kind of red meat) package of Lavash bread
