No Brainer Recipe: Sausage Stew

This one-pot meal is so easy to make. Chop, dump and boil. That’s all there is to this sausage stew. It’s warm and hearty, perfect for those cool fall nights coming up. The beans and potatoes take on the flavors of the sausage and the broth creating a dish that tastes like it simmered on the stove all day. Serve with biscuits on the side to soak up the broth. To make it simple with no mess I use refrigerated biscuit dough.

No-brainer Recipe: Chicken Tortilla Soup

guest post by Abby Glaser Easy Chicken Tortilla Soup Put 1-2 lbs of boneless, skinless chicken breast in the crockpot (can still be frozen) with one jar of salsa and six cups of chicken broth. Let cook on low for about 6-8hrs, then shred chicken with a fork.   Preheat oven to 325. Cut tortillas into strips and bake for about 10 mins until browned and crispy. Sprinkle over soup with shredded cheddar cheese!

Fall is the most beautiful season.  I love the colors, the smell in the air, the crunchy leaves, the cool crisp air (sometimes).  I also love that it is time for chili’s and soups!  I am going to do a lot of these this winter, in hopes of cutting back on calories and the food budget, time too! Here is one of our favorite soup recipes that is pretty much an open up the can and dump everything together kinda meal!!  But tastes like you’ve
