This recipe comes from my mom. It utilizes some shortcuts, like a roaster chicken and frozen broccoli spears.  It is ultra comforting and a delicious meal I loved growing up. If you would like to lighten it up, by all means feel free to use lower in fat alternatives. Chicken and Broccoli Casserole

Guest post by: from Making Food Eating Food, *photos ©chanelle richardson* So, that box of bright orange powdered-cheese-type-pasta-stuff works in a pinch…but it kinda freaks me out. I mean, is anything found in nature that is actually that colour? Anyway, I came up with a recipe for macaroni and cheese that is just as fast, even more delicious, and (to me) more gratifying. Quick Homemade Mac & Cheese makes enough to feed mom and two hungry smallish kiddos. adjust accordingly.

No-brainer Recipe: Caramelized Peaches with Ice Cream

Here is what you need to know: Peaches are delicious. Roasting peaches in the oven brings out a delicious flavor that is perfect for a light Summer dessert. If you would like to lighten it up you can substitute sorbet for ice cream. I think I’ll stick with ice cream though. If you are feeling frisky, you could also grill this on an outdoor (clean) barbecue. Eat up!

Bacon Cinnamon Rolls. They are the perfect sweet and savory combination. If you want to fancy it up, you can of course make the cinnamon rolls from scratch, but I really like the Pillsbury Cinnabon style of canned cinnamon rolls, so I use those. You can use a good quality precooked bacon, or regular bacon. I like the precooked bacon from Costco personally. Either way, you have to crisp up the bacon a bit before you add it to the cinnamon rolls. Use the microwave

No-brainer Recipe: Strawberry Summer Cake

I ran across the beautiful pictures at Milk & Honey and decided this would be the perfect way to use up the strawberries I had left over from making freezer jam. May I just say that I hate my stupid oven. It can run anywhere from 100 to 200 degrees hotter than it should, then when I made this cake, I pulled it out after an hour in the oven and it was a lukewarm batter. Bah! This is why I don’t bake very often,

No-brainer Recipe: Strawberry Cheesecake Squares

Cheesecake Squares are a great recipe for when you don’t have tons of time to make a proper cheesecake, or if you only have one block of cream cheese in the fridge and can’t make it to the store to buy any more. Cheesecake purists can omit the jam from the recipe with no other changes. I enjoyed the jam in these squares, but next time around I’m going to go the purist route. Ready for the recipe?
