The KitchenAid Stand Mixer Changed My Life.

KitchenAid Stand Mixer

Let me preface by saying that this post is in no way sponsored by KitchenAid or a PR firm. In fact, for years I longed for the chance to review a KitchenAid stand mixer, but the chance never came my way.  A few of my blogging colleagues did get the chance, which deepened my longing, especially when I witnessed the time the mixer saved with cooking and baking, as well as the rave reviews I kept reading. And then something wonderful happened. My mother-in-law bought

Pantry Recipes: Shrimp Etouffee

I have always wanted to try shrimp etouffee, which it turns out is delicious! I love this recipe because it utilizes so many pantry items that most cooks normally have on hand. I also loved that I learned a few new things while reading about Cajun cooking. There are apparently two schools of thought on etouffee. Some believe that it should not have a tomato component, while others say it should. My mom made this for dinner a few weeks back and she went with

No-brainer Recipe: Strawberry Cheesecake Squares

Cheesecake Squares are a great recipe for when you don’t have tons of time to make a proper cheesecake, or if you only have one block of cream cheese in the fridge and can’t make it to the store to buy any more. Cheesecake purists can omit the jam from the recipe with no other changes. I enjoyed the jam in these squares, but next time around I’m going to go the purist route. Ready for the recipe?

Chocolate Pecan Pie Bars are great for when you aren’t in the mood to make pie crust from scratch. Chewy and chocolaty. It is hard to go wrong when you are dealing with pecans and chocolate. Most of the ingredients in this recipe are ones that we have on hand at all times, so it is great for a spur of the moment sweet treat.

Raise your hand if you have heard of Hawaiian Haystacks. Anybody? Well, I bet a few of you have. It is more of a retro dinner and I need you to have an open mind going in to this, the recipe is a little quirky.

Rice Krispy Treats are a classic childhood dessert. It was a special night in our house when mom pulled out the ingredients to make a batch, and you can bet they were gone by the next day. I wanted to jazz up the classic recipe so I went on a recipe search. Up came this recipe that included peanut butter in the krispy mix, with a dunk in melted chocolate to finish it off. They are deliciously addictive.

Pantry Recipes: Scallop and Bacon Corn Chowder

While Scallop and Corn Chowder might sound like a fancy recipe, a lot of the ingredients for this chowder come from an average pantry. Onions, potatoes, chicken broth and corn (canned, frozen or fresh) are staples in most kitchens. What I love about the cooking method for this recipe is that  nothing is complicated. You are in and out of the kitchen within the hour. Enjoy with your favorite crusty bread. Scallop and Corn Chowder Makes 4 servings 5 slices bacon 1 1/2 pounds sea
