Fry bacon in a skillet until crispy, then add to a Crock-Pot slow cooker. Season beef with salt and pepper, then add to the same skillet, searing each side for around 2-3 minutes. Add beef to slow cooker.
Using red wine, scrape skillet to collect the brown bits in the pan. Simmer, reduce and slowly add chicken broth, tomato sauce, and soy sauce. Slowly whisk in the flour, then add sauce to slow cooker.
Add garlic, thyme, carrots, potatoes, and mushrooms to slow cooker. Stir, then cook on low until beef is tender, around 5-8 hours (depending on temperature of slow cooker).
