French Onion Soup Recipe

This time of year, I love to make soup. Chicken, tomato, pumpkin, carrot…the list goes on and on.

However, there was one soup that I was a little intimated to create – French onion soup. Turns out that it isn’t so difficult!

It turned out SO delicious! Recipe below.

French Onion Soup


  • 2 tablespoons olive oil
  • 2 tablespoon butter
  • 6 medium yellow onions, sliced (6 cups onion)
  • 2 cloves garlic, chopped
  • 1/4 teaspoon sugar
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • 1/2 cup dry white wine or chicken broth
  • 6 cups low-sodium beef broth
  • 1 tablespoon finely chopped fresh thyme
  • 4 (1-ounce) slices French bread
  • 2 cups shredded Gruyere or white Cheddar cheese
  • Chopped fresh thyme (optional)


  1. Heat olive oil and butter in a Dutch oven over medium-high heat. Sauté onions and garlic 5 minutes or until tender. Stir in sugar, pepper, and salt. Reduce heat to medium; cook 20 minutes, stirring frequently. Stir in wine, and cook for 1 minute. Add broth and thyme; bring to a boil. Cover, reduce heat, and simmer 2 hours stirring occasionally.
  2. Preheat broiler.
  3. Place bread in a single layer on a baking sheet; broil 2 minutes per side minutes or until toasted. Place 4 ovenproof bowls large baking pan. Ladle 1 cup soup into each bowl. Divide bread evenly among bowls; top each soup bowl with 1/2 cup shredded cheese. Broil 3 minutes or until cheese begins to brown. Let cool 5 minutes before serving and garnish with fresh thyme, if desired.
