Using refrigerated croissant dough, fresh spinach, red pepper, artichokes, ricotta cheese, garlic, and parmesan cheese, this Spinach and Artichoke Christmas Tree is the perfect recipe to serve this holiday! Maybe even a new Christmas tradition!

Ingredients for Spinach and Artichoke Christmas Tree

  • 8 oz package refrigerated croissant dough
  • 1 1/2 cups finely chopped fresh spinach (make sure you get all of the excess water off the leaves)
  • 1/4 cup finely chopped red pepper finely chopped
  • 1/4 cup finely chopped canned artichokes
  • 1/3 cup ricotta cheese
  • 1 garlic clove, minced
  • 1/2 tsp. crushed red chili flakes 
  • 4 tbsp. grated Parmesan cheese, divided
  • Salt and pepper to taste

Instructions for Spinach and Artichoke Christmas Tree

  1. Preheat oven to 375F. Line a large baking sheet with parchment paper.
  2. In a medium bowl combine spinach, red pepper, artichoke hearts, ricotta cheese, minced garlic, red pepper, 2 tablespoons of Parmesan cheese, salt, and pepper. 
  3. Roll the dough into about 12″ x 8″ thin rectangular baking sheet. Spread the ricotta mixture evenly across the dough. Then roll up the sheet to form swirls of the ricotta-spinach mixture. Carefully cut the roll into 1/2″-3/4″ slices. Arrange these slices on the lined baking sheet into a Christmas tree shape
  4. Bake for about 20 to 25 minutes or until well done, Sprinkle with remaining parmesan cheese if desired and serve warm.
