Chocolate and bacon are popular food pairing the past few years, and with good reason.
They taste wonderful together! While I was coming up with this recipe for Triple Chocolate Drizzled Candied Bacon, I had trouble deciding what type of chocolate to use. Milk chocolate, white chocolate, dark chocolate, honestly they all sounded delicious. My solution? Use all three! For the candied bacon recipe I slightly adapted a recipe from Food Network.
Equipment: 2 baking sheetspreferably the same size
For garnish:
1/2cupdark chocolate
1/2cupwhite chocolate
1/2cupmilk chocolate
Equipment: small Ziploc bags for drizzling
Instructions
For Candied Bacon:
Preheat the oven to 325 degrees F.
Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks. Check the bacon after 20 minutes. The bacon, depending on thickness, might require up to an additional 15 minutes. Check every 5 minutes or so. Do not turn the heat up in order to make the bacon cook faster - it will burn.
Once it is cooked through, remove from oven and transfer to a plate to cool. It will continue to crisp after removing from the pan so be careful not to over cook.
To Garnish:
Melt the chocolate either over a double boiler or in a small bowl in the microwave, stirring after every 15 seconds. Add to a small Ziploc bag and snip a tiny corner off the bag. Drizzle the candied bacon with all three melted chocolates and chill until the chocolate has set up.
