Chocolate Mint Cupcakes Recipe

Imagine a moist, tender chocolate cupcake topped with mint frosting that is sweet but also incredibly light and fluffy.

Ingredients

For the cupcakes:

  • 1 box moist chocolate cake mix
  • Ingredients called for on the box Eggs, oil, water, etc.

For the frosting:

  • 1/2 cup shortening
  • 1/2 cup butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • A few drops of green food coloring

For garnish:

  • 1 box mint Oreos
  • chocolate sprinkles

Instructions 

  • Prepare the cake mix according to box directions. Bake and set aside to cool completely. Be sure to follow the directions on the box for cupcakes.
  • Prepare the frosting: Add the shortening and butter to a large mixing bowl. Beat until fluffy. Add the powdered sugar and beat for 3 minutes. Add the vanilla and mint extracts and a few drops of green food coloring. Add more food coloring if needed to match the shade of green in the Oreos. Mix to incorporate the coloring. Frost the cooled cupcakes.
  • Immediately after frosting, add the sprinkles. I add the sprinkles after frosting each cupcake so that they will actually stick. Gently break the Oreos in half and top each cupcake with half an Oreo. Serve.
