Italian Stuffed Green Peppers Recipe

Italian sausage, quinoa, sauteed onions, and parmesan cheese stuffed inside of a fresh green bell pepper and topped with mozzarella cheese.

Ingredients

  • 2 Italian Sausage links
  • 4 large green bell peppers washed, tops cut off and seeds removed
  • 1 cup quinoa
  • 1/2 cup grated parmesan cheese
  • 1/4 cup grated mozzarella cheese
  • 3 tsp divided
  • 1 large onion diced
  • 1/2 tsp dried oregano
  • 1/2 tsp ground fennel
  • salt and pepper to taste
  • optional: removed bell pepper tops diced

Instructions 

  • Cook quinoa per the package instructions. Set to the side.
  • Preheat oven to 375 degrees. Place prepared green peppers (with tops cut off and seeds removed) into a greased baking sheet.
  • Dice bell pepper tops (optional) and onion. In a large skillet, heat 2 tsp olive oil. Saute diced pepper and onion until soft. Remove from skillet and set to the side.
  • Add tsp to skillet, then cook sausage until lightly browned. Add bell peppers/onions and spices to the skillet for 2-3 minutes. Add cooked quinoa and parmesan cheese, season with salt and pepper (to taste) and heat up until entire mixture is warm.
  • Using a spoon, pack mixture into each bell pepper. Bake for 30 minutes, add grated mozzarella on each pepper, then back for an additional 10-15 minutes or until cheese starts to bubble.
