4large green bell pepperswashed, tops cut off and seeds removed
1cupquinoa
1/2cupgrated parmesan cheese
1/4cupgrated mozzarella cheese
3tspdivided
1large oniondiced
1/2tspdried oregano
1/2tspground fennel
salt and pepperto taste
optional: removed bell pepper topsdiced
Instructions
Cook quinoa per the package instructions. Set to the side.
Preheat oven to 375 degrees. Place prepared green peppers (with tops cut off and seeds removed) into a greased baking sheet.
Dice bell pepper tops (optional) and onion. In a large skillet, heat 2 tsp olive oil. Saute diced pepper and onion until soft. Remove from skillet and set to the side.
Add tsp to skillet, then cook sausage until lightly browned. Add bell peppers/onions and spices to the skillet for 2-3 minutes. Add cooked quinoa and parmesan cheese, season with salt and pepper (to taste) and heat up until entire mixture is warm.
Using a spoon, pack mixture into each bell pepper. Bake for 30 minutes, add grated mozzarella on each pepper, then back for an additional 10-15 minutes or until cheese starts to bubble.
