1 1/2cupsfinely chopped fresh spinachmake sure you get all of the excess water off the leaves
1/4cupfinely chopped red pepper finely chopped
1/4cupfinely chopped canned artichokes
1/3cupricotta cheese
1garlic cloveminced
1/2tsp.crushed red chili flakes
4tbsp.grated Parmesan cheesedivided
Salt and pepper to taste
Instructions
Preheat oven to 375F. Line a large baking sheet with parchment paper.
In a medium bowl combine spinach, red pepper, artichoke hearts, ricotta cheese, minced garlic, red pepper, 2 tablespoons of Parmesan cheese, salt and pepper.
Roll the dough into about 12" x 8" thin rectangular sheet. Spread the ricotta mixture evenly across the dough. Then roll up the sheet to form swirls of the ricotta-spinach mixture. Carefully cut the roll into 1/2"-3/4" slices. Arrange these slices on the lined baking sheet into a Christmas tree shape
Bake for about 20 to 25 minutes or until well done, Sprinkle with remaining parmesan cheese, if desired, and serve warm
