Easy Cinnamon Roll Pancake Recipe

This delicious Cinnamon Roll Pancake recipe is quickly becoming a weekend breakfast favorite for my kids and I!

Ingredients

for the cinnamon filling:

  • 1/2 stick unsalted butter melted
  • 1/4 cup packed light brown sugar
  • 1/2 tbsp ground cinnamon

glaze:

  • 1/2 stick unsalted butter
  • 2 oz cream cheese room temperature
  • 3/4 cup powdered sugar
  • 1/2 tsp vanilla extract

pancakes:

  • 1 box King Arthur Flour Cloud 9 Pancake Mix
  • 2 eggs
  • 1/2 stick of butter or 1/4 cup vegetable oil
  • 2 1/4 cups milk

Instructions 

  • Create cinnamon filling by combining all ingredients in a bowl and then transferring to a plastic baggie. Cut a tiny corner of the bag and set aside.
  • Create the glaze by melting butter in a small saucepan, then whisking in cream cheese until smooth. Slowly whisk in powdered sugar and vanilla extract.
  • Follow the easy instructions on the Cloud 9 Pancake Mix box, simply stirring the wet ingredients into the dry mix, to create the batter. Place around 1/4 cup of mix per pancake into a pre-heated, greased skillet. Once the batter starts to bubble, add cinnamon filling by spiraling out from the middle. Do not take it all the way to the edges or it will leak out once you flip (see image of spiral below). Once filling sinks into the batter, flip!
  • Top with glaze (heat on stove if needed) and enjoy!
