Rainbow Veggie Pizza Recipe

Today's recipe is an easy rainbow veggie pizza that is perfect for St. Patrick's Day, a party, or for any night of the week.

Ingredients

  • large Boboli thick crust pizza shell
  • 1 cup pizza sauce
  • 1 teaspoon ground oregano
  • 2 fresh basil leaves - crushed
  • salt and pepper to taste
  • 1 cup mozzarella cheese
  • 1 cup cherry tomatoes - sliced diagonally
  • 1 orange pepper - diced
  • 1 yellow pepper - diced
  • 1/2 green pepper- diced
  • 1/4 red onion - diced
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt

Instructions 

  • Preheat oven to 450° and lightly grease your pizza pan.
  • Unwrap the Boboli pizza shell and place on the pizza pan.
  • Pour the pizza sauce into a small sauce pan and add the oregano, basil and salt and pepper, to taste. Heat until simmering. Remove from heat. Allow to cool for 5 minutes before spreading on the pizza shell.
  • Sprinkle the cheese on top of the sauce, covering completely.
  • Begin to layer the pizza with the veggies, starting with the cherry tomatoes. Lay the diagonally-sliced tomatoes face down along the outer edge of the pizza.
  • Place the sliced yellow peppers in the next inner layer, after the tomato layer.
  • Lay the diced orange peppers in a layer along the diameter of the pizza, after the yellow peppers.
  • The next inner layer should be the green pepper pieces and top off with a layer of red onions.
  • Drizzle the pizza with a tablespoon of olive oil and sprinkle sea salt on top.
  • Bake for 10-12 minutes.
  • Cool for 3-4 minutes before cutting into pieces and serving.
