Today’s recipe is an easy rainbow veggie pizza that is perfect for St. Patrick’s Day, a party or for any night of the week.

Rainbow Veggie Pizza Recipe

Yield: Servings: 4-6


  • large Boboli thick crust pizza shell
  • 1 cup pizza sauce
  • 1 teaspoon ground oregano
  • 2 fresh basil leaves - crushed
  • salt and pepper, to taste
  • 1 cup mozzarella cheese
  • 1 cup cherry tomatoes - sliced diagonally
  • 1 orange pepper - diced
  • 1 yellow pepper - diced
  • 1/2 green pepper- diced
  • 1/4 red onion - diced
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt


1.   Preheat oven to 450° and lightly grease your pizza pan.

2.   Unwrap the Boboli pizza shell and place on the pizza pan.

3.   Pour the pizza sauce into a small sauce pan and add the oregano, basil and salt and pepper, to taste. Heat until simmering. Remove from heat. Allow to cool for 5 minutes before spreading on the pizza shell.

4.   Sprinkle the cheese on top of the sauce, covering completely.

5.   Begin to layer the pizza with the veggies, starting with the cherry tomatoes. Lay the diagonally-sliced tomatoes face down along the outer edge of the pizza.

6.  Place the sliced yellow peppers in the next inner layer, after the tomato layer.

7.  Lay the diced orange peppers in a layer along the diameter of the pizza, after the yellow peppers.

8.  The next inner layer should be the green pepper pieces and top off with a layer of red onions.

9.   Drizzle the pizza with a tablespoon of olive oil and sprinkle sea salt on top.

10.   Bake for 10-12 minutes.

11.   Cool for 3-4 minutes before cutting into pieces and serving.
