Strawberry Cupid Mimosas Cocktail Drink Recipe

This is a simple, yet delicious strawberry mimosa that can be enjoyed on Valentine's Day for breakfast, brunch, lunch or dinner.

Ingredients

  • 1 cup frozen strawberries
  • 1/4 cup granulated sugar
  • Heart shaped mold or ice cube tray
  • 1 bottle champagne
  • 2 champagne flutes

Instructions 

  • In a medium sauce pan, add the frozen strawberries.   Heat over low/medium heat until the strawberries turn soft like a soup. (This takes about 6 to 8 minutes).
  • Add sugar and stir.  Cook foam additional 5 minutes, stirring frequently.
  • Remove from heat and cool for 5 minutes.
  • Pour the cooled strawberry mixture into a food processor and purée.
  • Pour the purée into a strainer to get rid of all of the small seeds.
  • Transfer the strained purée to your heart shaped molds or ice cube tray.   Freeze for at least 4 hours or overnight.
  • Add 4-5 frozen strawberry heart cubes to each champagne flute.
  • Pour champagne into each glass and ENJOY!!
