Sausage, Cheese & Egg Breakfast Hash Brown Nests Recipe

This amazing breakfast recipe has savory sausage, cheddar cheese, and eggs encased in a delicious hash brown nest!

Ingredients

  • 1 package fully cooked breakfast sausage patties
  • 15 oz frozen shredded hash browns thawed
  • 1 cup cheddar cheese shredded
  • 1 tbsp cheddar cheese shredded
  • 1 tbsp olive oil
  • 6  medium eggs
  • 1/2 tbsp parsley chopped
  • salt and pepper to taste

Equipment

  • 1 6-cup muffin pan

Instructions 

  • Pre-heat over to 425 degrees.
  • Combine hash browns, olive oil, salt, pepper and 1 cup cheddar cheese in a large bowl.
  • Spray muffin pan with cooking spray and start to shape the hash brown mixture into each pan, creating a "nest" for each one.
  • Bake nests until the edges start to turn brown and cheese is melted, around 15 minutes or so. Remove from oven and set temperature to 350 degrees.
  • Add one sausage patty into each nest, then crack on top of each patty, sprinkle 1 tbsp of cheddar cheese and parsley. Bake until eggs have set, around 15 minutes or so.
  • Let cool and serve!

Notes

Store leftovers in an airtight container in the refrigerator and heat up the following day.
