Easy Ham and Potato Cheesy Soup Recipe

Ingredients

  • 2 cups potatoes peeled and diced
  • 2 cups chicken broth
  • 1/2 cup carrots sliced
  • 1/4 cup white onions chopped
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1 cup canned corn
  • 1 1/2 cups cooked ham cubed

Instructions 

  • In a large soup pot, add potatoes, chicken broth, carrots, and onions. Bring to boil.
  • Cover and simmer for 15 minutes.
  • While soup is simmering, melt butter in a medium saucepan. When butter is melted, add flour.
  • Stir continuously until a roux is formed, then slowly add milk while stirring until combined. Cook for 2 minutes (liquid will thicken).
  • Add milk mixture to soup pot and stir until well combined. Add corn and ham.
  • Heat through, then serve into soup bowls with a ladle.
