Preheat oven to 350F. Coat a regular size muffin pan well with cooking spray.
In a large bowl, combine stuffing, turkey and spinach, stirring well. Add eggs, milk and pepper, mixing well. Divide stuffing mixture evenly among the 12 muffin cups, filling each about 1/2 to 3/4 full.
Bake 25 minutes or until golden brown. Let cool at least 5 to 10 minutes. Use a knife around the edges to loosen, if needed.
