Leftover Turkey Stuffin’ Muffins
Thanksgiving was a couple of days ago, but my refrigerator is still full of delicious leftovers! I love coming up with new ideas for reusing leftover, like the turkey soup recipe I shared a few weeks ago, and today I have a brand new one to post. 🙂
This beauty is a combination of leftover turkey stuffing and spinach that is so easy to put together, you’ll have plenty of time to nap the weekend away.
Leftover Turkey Stuffin' Muffins
- 3 cups leftover stuffing
- 1 cup chopped turkey
- 1 cup fresh baby spinach leaves, chopped
- 4 eggs
- 1/4 cup milk
- Freshly ground pepper
- Preheat oven to 350F. Coat a regular size muffin pan well with cooking spray.
- In a large bowl, combine stuffing, turkey and spinach, stirring well. Add eggs, milk and pepper, mixing well. Divide stuffing mixture evenly among the 12 muffin cups, filling each about 1/2 to 3/4 full.
- Bake 25 minutes or until golden brown. Let cool at least 5 to 10 minutes. Use a knife around the edges to loosen, if needed.
