1 - 1 1/2cupsleftover turkey meatshredded or diced
6eggs
1tbspbutter
3cupsspinach
1cloveof garlicminced
salt and pepperto taste
optional: top with dollap of sour cream
Instructions
Whisk eggs, cheese, salt and pepper in a medium bowl.
Over medium high heat, heat up a non-stick skillet (or spray with cooking spray). When hot, add butter. When butter is completely melted, add spinach and cook for 1 minute, then add combine turkey and garlic.
Cook for 3-4 minutes, then add egg mixture and cook for 5 minutes.
Broil for 4 minutes or until eggs are set. Let cool and serve!
