Cheesy Leftover Turkey Frittata Recipe

Repurpose leftover holiday turkey by making this super easy breakfast frittata with cheese, eggs, diced peppers, and hashbrowns! 

Ingredients

  • 1/2 cup Borden® Shredded Mozzarella Cheese
  • 1 - 1 1/2 cups leftover turkey meat shredded or diced
  • 6 eggs
  • 1 tbsp butter
  • 3 cups spinach
  • 1 clove of garlic minced
  • salt and pepper to taste
  • optional: top with dollap of sour cream

Instructions 

  • Whisk eggs, cheese, salt and pepper in a medium bowl.
  • Over medium high heat, heat up a non-stick skillet (or spray with cooking spray). When hot, add butter. When butter is completely melted, add spinach and cook for 1 minute, then add combine turkey and garlic.
  • Cook for 3-4 minutes, then add egg mixture and cook for 5 minutes.
  • Broil for 4 minutes or until eggs are set. Let cool and serve!
