Line a baking sheet with parchment paper and set aside.

In a microwave safe bowl, microwave the semi-sweet chocolate chips for 45 seconds. Stir until completely melted and smooth.

Dip four of the fortune cookies into the melted chocolate, halfway. Place on the lined cookie sheet and immediately sprinkle the chocolate with sprinkles.

In a microwave safe bowl, microwave the pink chocolate melts for 45 seconds. Stir until completely melted and smooth.

Dip four of the fortune cookies into the melted pink chocolate, covering halfway. Place back on the baking sheet and add sprinkles.

In a microwave safe bowl, microwave the red chocolate melts for 45 seconds and stir until melted.

Dip the remaining fortune cookies into the melted red chocolate covering each one half way. Place the cookies back on the baking sheet and sprinkle with the assorted valentine sprinkles.

Chill for 15 minutes to allow the chocolates to harden.
