Beat 5 eggs in a large bowl, then stir in chopped peppers. Season with salt and pepper (to taste). Scramble eggs in a skillet and set to the side.
Unroll each crescent roll on parchment paper-lined baking sheet, in a star shape.
On each crescent roll, lay a piece of cooked bacon, sprinkle half of the shredded cheese around the ring. Add scrambled eggs on top of cheese around the ring, then top with remainder of the cheese.
Fold crescent rolls over, then brush rolls with the egg wash.
Bake for 20 minutes or until the crescents are cooked and golden brown!
