1 1/2cupsfinely chopped fresh spinach (make sure you get all of the excess water off the leaves)
1/4 cupfinely chopped red pepper finely chopped
1/4 cupfinely chopped canned artichokes
1/3cup ricotta cheese
1garlic clove, minced
1/2 tspcrushed red chili flakes
4tbspgrated Parmesan cheese, divided
salt and pepper to taste
Preheat oven to 375F. Line a large baking sheet with parchment paper.
In a medium bowl combine spinach, red pepper, artichoke hearts, ricotta cheese, minced garlic, red pepper, 2 tablespoons of Parmesan cheese, salt and pepper.
Roll the dough into about 12" x 8" thin rectangular sheet. Spread the ricotta mixture evenly across the dough. Then roll up the sheet to form swirls of the ricotta-spinach mixture. Carefully cut the roll into 1/2"-3/4" slices. Arrange these slices on the lined baking sheet into a Christmas tree shape.
