Spinach and Artichoke Christmas Tree Recipe

Croissant dough, fresh spinach, red pepper, artichokes, ricotta cheese, garlic, & parmesan cheese make this Spinach and Artichoke Christmas Tree perfect recipe to serve this holiday!

Ingredients

  • 8-count package refrigerated croissant dough
  • 1 1/2 cups fresh spinach finely chopped (make sure you get all of the excess water off the leaves)
  • 1/4 cup red pepper finely chopped
  • 1/4 cup canned artichokes finely chopped
  • 1/3 cup ricotta cheese
  • 1 garlic clove minced
  • 1/2 tsp crushed red chili flakes
  • 4 tbsp grated Parmesan cheese divided
  • salt and pepper to taste

Instructions 

  • Preheat oven to 375F. Line a large baking sheet with parchment paper.
  • In a medium bowl combine spinach, red pepper, artichoke hearts, ricotta cheese, minced garlic, red pepper, 2 tablespoons of Parmesan cheese, salt and pepper.
  • Roll the dough into about 12" x 8" thin rectangular sheet. Spread the ricotta mixture evenly across the dough. Then roll up the sheet to form swirls of the ricotta-spinach mixture. Carefully cut the roll into 1/2"-3/4" slices. Arrange these slices on the lined baking sheet into a Christmas tree shape.
