Honey Roasted Carrots

I've been thinking of possible side dishes to pair with holiday meals, so I landed on these delicious honey-roasted carrots!


  • 2 pounds carrots peeled
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 11/2 teaspoons chopped fresh rosemary
  • Kosher salt and pepper


  • Preheat oven to 450F.
  • Place carrots on a lightly greased large baking sheet. Drizzle with olive oil and honey; sprinkle with rosemary, salt and pepper, tossing until carrots are coated with ingredients. Bake in preheated oven, 20 minutes or until crisp tender, tossing occasionally.
  • Testing note: place aluminum foil on your baking sheet and spray with cooking spray to eliminate cleanup.
  • This recipe can easily be halved.
