You can’t go wrong with carrots, especially these delicious honey-roasted carrots!
Honey Roasted Carrots
- 2 pounds carrots, peeled
- 2 tablespoons olive oil
- 2 tablespoons honey
- 11/2 teaspoons chopped fresh rosemary
- Kosher salt and pepper
- Preheat oven to 450F.
- Place carrots on a lightly greased large baking sheet. Drizzle with olive oil and honey; sprinkle with rosemary, salt and pepper, tossing until carrots are coated with ingredients. Bake in preheated oven, 20 minutes or until crisp tender, tossing occasionally.
Testing note: place aluminum foil on your baking sheet and spray with cooking spray to eliminate cleanup.
This recipe can easily be halved.
