Easy Tortilla Breakfast Cups Recipe

These tortilla breakfast cups can be made with eggs, cheese, sausage, ham, bacon, mushrooms, or spinach - the sky is the limit!

Ingredients

  • 6 flour tortillas cut into 3.5" rounds
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar & mozzarella cheese
  • 3/4 cup sausage cooked & crumbled
  • 1 red bell pepper diced, to taste
  • 1 onion diced, to taste
  • salt and pepper to taste

Instructions 

  • Cut tortillas in 3.5" rounds and place into greased muffin pan.
  • Set 1/4 of the cheese and veggies aside. Whisk all remaining ingredients in a medium bowl.
  • Pour mixture into tortilla cups, then top with desired veggies.
  • Bake at 350 degrees for 10 minutes. Remove and top with remaining cheese. Bake another 5 minutes.
