Easy Tortilla Cups

These tortilla breakfast cups can be made with eggs, cheese, sausage, ham, bacon, mushrooms, or spinach - the sky is the limit!

Ingredients

milk

shredded cheese
cheddar & mozzarella

cooked sausage
crumbled

diced veggies - red bell pepper & onions

cut tortillas

salt and pepper
Instructions
Cut tortillas in 3.5" rounds and place into greased muffin pan.
Set 1/4 of the cheese and veggies aside. Whisk all remaining ingredients in a medium bowl.
Pour mixture into tortilla cups, then top with veggies.
Bake at 350 degree for 10 minutes, remove and top with remaining cheese. Bake another 5 minutes.
