Hot Rueben Dip Recipe

With St. Patrick's Day coming up in a bit, I thought a hot cheesy and corned beef Reuben dip would be perfect!

Ingredients

cooked corned beef
diced

cream cheese - softened

Swiss cheese - shredded
▢

crunchy sauerkraut - drained

cup
sour cream
▢

Thousand Island dressing

teaspoon
pepper

Optional- 1/4 teaspoon salt

Swiss cheese
to garnish

Parsley
to garnish

Mini rye bread rounds or crackers
Instructions
Preheat oven to 350°. Grease a 8 inch cast iron skillet or 8 inch casserole dish and set aside.
Add the diced corned beef and cream cheese to a large mixing bowl.
Mix in the Swiss cheese, drained sauerkraut, sour cream, Thousand Island dressing and salt(optional) and pepper. Stir until well incorporated.
Transfer to greased skillet/dish and bake for 30 minutes.
After 30 minutes, sprinkle 1/2 cup Swiss cheese on top of dish and return to oven until cheese is melted (1-2 minutes).
Serve warm with mini rye bread rounds or crackers.
