With St. Patrick's Day coming up in a bit, I thought a hot cheesy and corned beef Reuben dip would be perfect!

Ingredients

  • 1 pound cooked corned beef diced
  • 8 oz cream cheese - softened
  • 1 cup Swiss cheese - shredded
  • 1 cup crunchy sauerkraut - drained
  • 1/2 cup sour cream
  • 1/4 cup Thousand Island dressing
  • 1/4 teaspoon pepper
  • Optional- 1/4 teaspoon salt
  • 1/2 cup Swiss cheese to garnish
  • Parsley to garnish
  • Mini rye bread rounds or crackers

Instructions 

  • Preheat oven to 350°. Grease a 8 inch cast iron skillet or 8 inch casserole dish and set aside.
  • Add the diced corned beef and cream cheese to a large mixing bowl.
  • Mix in the Swiss cheese, drained sauerkraut, sour cream, Thousand Island dressing and salt(optional) and pepper. Stir until well incorporated.
  • Transfer to greased skillet/dish and bake for 30 minutes.
  • After 30 minutes, sprinkle 1/2 cup Swiss cheese on top of dish and return to oven until cheese is melted (1-2 minutes).
  • Serve warm with mini rye bread rounds or crackers.
