Sweet and Spicy Teriyaki Meatball Noodles

Though it was a roller coaster of a year for me, there are some things about motherhood that will always stay the same.

Like dinner time. Because the fam has got to eat. Mama’s gotta eat, too.

But, here’s the thing – dinner time can’t be complicated. I don’t do complicated.

At the same time, I don’t do boring, either. That is why I love having noodles on hand in my pantry that I can create into just about anything.

Spicy Teriyaki Meatball Noodles

Sweet and spicy teriyaki meatball noodles that makes an easy weeknight dinner that the whole family will love!

Ingredients

entree:

  • 1 tbsp vegetable oil
  • 1 tbsp hoisin sauce
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 tbsp honey
  • 1/2 tbsp sesame oil
  • 1 tsp Sriracha sauce omit to remove spiciness
  • 1/4 cup brown sugar
  • 1/2 tsp ground ginger
  • 1 clove garlic minced
  • 1 package of No Yolks noodles
  • 1 package frozen fully-cooked meatballs

garnish:

  • 3 stalks green onion chopped
  • toasted sesame seeds

Instructions 

  • Begin cooking No Yolks noodles according to package directions.
  • In a large skillet, heat vegetable oil over medium heat. Add frozen meatballs to skillet and cook until meatballs are browned on each side. Turn off heat.
  • In a medium saucepan, whisk water, soy sauce, honey, sesame oil, brown sugar, garlic, and ground ginger over low heat until well combined. Bring to a simmer, then remove from heat.
  • Add sauce mixture to meatballs in skillet, combine, then bring to a simmer and cook 10-15 minutes or until meatballs are covered and sauce is thick. Add cooked No Yolks noodles to skillet, coating each noodle in sauce.
  • Garnish with green onions and sesame seeds. Enjoy!
