It doesn’t matter if it’s fall, winter, spring or summer, I am ALWAYS in the mood for soup. Light or hearty, I’m always a fan of flavorful broth and yummy toppings. Soup FTW!

For today’s post, I have put together a loaded baked potato soup made in a pressure cooker (I personally use a Crock Pot® Express Crock Multi-Cooker), so it’s VERY fast, yet very, very yummy!

Instant Pot Pressure Cooker Loaded Baked Potato Soup Recipe

This Instant Pot pressure cooker potato soup has potatoes, carrots, chicken broth, then loaded with cheese, bacon, sour cream, & green onions.

Ingredients

soup:

  • 2 lbs fresh potatoes cubed
  • 1 cup carrots cubed
  • 28 oz low-sodium chicken broth
  • 1 1/2 cups milk
  • 8 oz cheddar cheese
  • 1 tbsp garlic powder
  • 1 tbsp onion powder

toppings:

  • sour cream
  • crumbled bacon
  • green onions sliced

Instructions 

  • Add potatoes, carrots, chicken broth, and spices to the pressure pot. Attach and lock lid, then set to the "SOUP" function (30 minutes).
  • After cook, do a quick release, then set to "BROWN/SAUTE". Whisk in cheese and milk, then simmer for 2-3 minutes or until smooth.
  • Top with your favorite toppings!
