It is hard to believe that the school year is almost over! In all honesty, I’m thrilled to have a break from the hustle and bustle of school drop-off and pick-up, as well as the endless amounts of homework and events to keep track of. It just becomes too much and by this time every year, I’m ready for a break from it. Until 3 months later, then I’m ready for structure again!
While I will have to find creative ways to keep the kids busy while I still attempt to work from home, I do look forward to having more flexibility with my schedule so that I can partake in one of my most favorite things – entertaining!
And here is the thing about entertaining (or at least my style of entertaining) – IT DOES NOT HAVE TO BE HARD. I mean, you can make the planning process difficult, but why if you don’t have to? If you are anything like me, you would rather spend your time and energy with your guests and not stirring pots in the kitchen.
Soooooo…how can you cut your time from the kitchen when planning a party? By making easy recipes for one, especially dishes that can be made in one pot, or even better, in a slow cooker. Now we’re talking, right?

Slow Cooker Sweet & Spicy BBQ Meatballs
Ingredients
- 1 package frozen meatballs
- 18 oz bbq sauce
- 18 oz grape jelly
- hot sauce to taste
- optional: chopped scallions as garnish
Instructions
- Put all ingredients into a slow cooker and cook on low for 5-6 hours.
- Garnish with chopped scallions and serve with toothpicks.
These meatballs are seriously addicting!
