Leftover Turkey Stuffin’ Muffins
This beauty is a combination of leftover turkey stuffing and spinach that is so easy to put together, you’ll have plenty of time to nap the weekend away.

Leftover Turkey Stuffin' Muffins
Ingredients
- 3 cups leftover stuffing
- 1 cup chopped turkey
- 1 cup fresh baby spinach leaves chopped
- 4 eggs
- 1/4 cup milk
- Freshly ground pepper
Instructions
- Preheat oven to 350F. Coat a regular size muffin pan well with cooking spray.
- In a large bowl, combine stuffing, turkey and spinach, stirring well. Add eggs, milk and pepper, mixing well. Divide stuffing mixture evenly among the 12 muffin cups, filling each about 1/2 to 3/4 full.
- Bake 25 minutes or until golden brown. Let cool at least 5 to 10 minutes. Use a knife around the edges to loosen, if needed.
